Corn and Capsicum Wraps

Whole wheat wraps and the contrasting colours, flavours and textures of corn and capsicum make this recipe the perfect healthy snack.

Makes 4 wraps

Ingredients
For the dough
• 1/2 cup whole wheat flour (gehun ka atta)
• 1 tsp oil
• Salt to taste
• Whole wheat flour (gehun ka atta) for rolling
• Oil for cooking

For the stuffing
• 1 tbsp oil
• 1/2 tsp finely chopped green chillies
• 1/4 cup finely chopped onions
• 1 cup boiled corn
• 1/4 cup finely chopped capsicum
• 1/4 cup finely chopped tomatoes
• 1/2 tsp chilli powder
• Salt and freshly ground black pepper to taste

Other ingredients
• 8 tbsp pizza sauce

Method
For the dough
• Combine all the ingredients in a deep bowl , and knead them into a soft dough using enough water.
• Divide the dough into 4 equal portions and roll each portion into a 175 mm. (7″) diameter circle.
• Heat a non-stick tava (griddle) and cook the wraps using a little oil, until they are golden brown on both sides. Keep aside.

For the stuffing
• Heat the oil in a broad non-stick pan, add the green chillies and onions and sauté on a medium flame for a minute.
• Add the corn, capsicum, tomato, chilli powder, salt and pepper, mix well and cook on a medium flame for a few minutes, while stirring occasionally.
• Divide the stuffing into four equal portions and keep aside.

How to proceed
• Place a wrap on a clean, dry surface and place a portion of the filling in its centre.
• Put two tbsp of the pizza sauce over it and roll it up tightly.
• Make the other three wraps in the same way and serve immediately.
